Mardi Gras signifies one thing in Copenhagen: the delightful arrival of Mardi Gras buns. This year, bakeries across the city are showcasing both traditional and innovative varieties, all filled with whipped cream, wiener dough, and whimsical twists. We’ve rounded up the finest spots to help you find your favorites in this comprehensive guide to Mardi Gras buns in Copenhagen for 2026.

By Nathalie

Copenhagen is abuzz with Mardi Gras bun excitement, as bakeries compete to whip up the most tantalizing creations. When winter’s chill sets in, few things are more comforting than a freshly baked Mardi Gras bun paired with a steaming cup of coffee.

Here’s a curated guide to must-visit bakeries this season:

Andersen Bakery
This year, Andersen Bakery unveils six signature Mardi Gras buns, each crafted from crispy croissant dough. Don’t miss the modern old-fashioned with its cardamom bun, mascarpone cream, toasted almond cream, and chocolate ganache, or the classic version featuring butter bun, vanilla cream, and chocolate glaze. Other noteworthy flavors include blueberry/lime compote, raspberry & pistachio, blackcurrant & mascarpone, hazelnut & chocolate, apple/yuzu compote, and rhubarb & vanilla.

Andersen & Maillard
Known for their inventive takes, Andersen & Maillard has introduced intriguing new variants this year. Sample their blackcurrant Mardi Gras bun filled with blackcurrant compote and light crème diplomate, or enjoy the coffee bun featuring silky coffee cream created from their house-roasted beans, brushed with coffee syrup and lightly dusted with cocoa. They also offer the classic Mardi Gras bun – a soft brioche with cardamom, filled with crème diplomate and a hint of dulce de leche.

Alice Cph
Nestled in Christianshavn, this charming bakery serves fluffy old-fashioned Mardi Gras buns filled with cardamom, vanilla cream, and chocolate glaze. Simple yet delightful, this classic treat is a must-try.

Ard Bakery
Just weeks after opening, Ard Bakery earned a recommendation from The New York Times. This season, their offerings include the classic old-fashioned with vanilla cream and remonce, as well as creative options like currants with redcurrant compote and mascarpone cream, coconut & passion fruit bun with airy coconut cream and tart passion fruit curd, and a decadent dark chocolate, rum & blueberry bun featuring chocolate crèmeux, rum, orange, and blueberry compote.

BUKA
BUKA introduces four enticing Mardi Gras buns this year. Begin with the cherry mascarpone bun, topped with cherry chocolate ganache and griotte compote. Their twist on the classic Semla with a fresh perspective is also worth a try. Additional flavors include hazelnut, blackcurrant & salted caramel, as well as dark chocolate & wild berries. All buns can be found in every store, with pre-order options available via their website.

Cadence CPH
In Carlsberg Byen, Cadence CPH offers three intriguing Mardi Gras buns this year. The Matcha variant, crafted in collaboration with Odd Balance, combines matcha, white chocolate ganache, and strawberry gel for a refreshing treat. The Choc-Cherry pays homage to cherries with rich chocolate cream and amarena cherry, while the Spiced-Apple bun features sweet apple, frangipane, and cardamom cream. Each of these buns showcases distinct flavors and high-quality butter-baked bases.

Coffee Collective Bakery
Known for their artisanal quality, Coffee Collective offers three delicious Mardi Gras buns this year. The first, featuring crisp viennoiserie, is filled with remonce and summer apple compote, topped with creamy vanilla and airy whipped cream. The second combines remonce with berry jam sourced from Collective Forest, and is similarly topped. Finally, the classic Old Fashioned Mardi Gras bun, juicy and rich, is filled with remonce and whipped cream.

Design Museum Denmark
This year, the museum café FORMAT presents a Mardi Gras bun inspired by the Italian maritozzo. Soft and delicately sweet, it’s filled with smooth whipped cream and fresh blackcurrants, complemented by blackcurrant compote for an intriguing balance of acidity and sweetness. The airy yet structured shape ensures that every bite remains elegantly satisfying. Open Tuesday through Sunday, it’s worth a visit.

HEART
This season, HEART introduces three engaging Mardi Gras bun flavors. The passion fruit bun features crispy viennoiserie drenched in passion fruit syrup, filled with mascarpone and tangy passion fruit curd, and garnished with toasted almonds. The classic old-fashioned consists of a soft milk bun filled with remonce, vanilla cream, dark chocolate glaze, and a pinch of Maldon salt. Lastly, the blackcurrant bun combines homemade blackcurrant compote with mascarpone vanilla cream and whipped cream, dusted with icing sugar and powdered blackcurrants.

Juno the Bakery
Juno delights with two exquisite Mardi Gras buns this year. The first, made from their signature laminated brioche, features caramelized cream lightly flavored with candied orange and topped with fluffy caramel whipped cream. The second bun, also a laminated brioche, is filled with creamy marzipan and blackcurrants, adorned with lightly lavender-marinated blackcurrants and soft vanilla whipped cream.

Copenhagen’s Bakery
This cozy spot in Carlsbergbyen offers two interpretations of the Mardi Gras bun: the classic old-fashioned with cardamom bun, remonce, crème diplomat, and chocolate glaze, alongside a new laminated bun filled with blackberry compote, pastry cream, and diplomat cream.

Leckerbaer
In Østerbro, Leckerbaer presents four delightful cream puff-style Mardi Gras buns this year, allowing you to choose from blueberry, mocha, gooseberry, or rhubarb—all filled with rich, creamy goodness, perfect for a sweet respite from winter’s chill.

Meyer’s Bakery
Starting from 10 AM each day (11 AM in Jægersborggade), you can savor the classic old-fashioned Mardi Gras bun with remonce, vanilla cream, and dark chocolate glaze. A returning favorite features wiener dough filled with remonce, vanilla cream, prune compote, and a fresh lemon glaze. New this year is the red porridge bun, a wiener bun filled with red berry compote and vanilla cream, and topped with white chocolate.

Rondo
Rondo bakery, nestled in the vibrant heart of Nørrebro, offers three enticing Mardi Gras buns this season. Start with the old-fashioned bun featuring soft dough, vanilla cream, and chocolate. Their semla is also a treat, complemented by an exotic twist of bergamot, Earl Grey, and crème fraîche, adding a refreshing citrus flair to the traditional experience.

RUG Bakery
RUG Bakery showcases three irresistible flavors this season. The Old Fashioned remains a classic favorite, with soft dough filled with traditional goodness. The Semla presents an airy bun filled with creamy almond mass and whipped cream, while the Maritozzo offers an Italian-inspired delight with silky whipped cream cushioned in a soft, tender bun.

St. Peder’s Bakery
This year, St. Peder’s introduces a butter-baked croissant bun filled with remonce, soft vanilla cream, prune compote, and fluffy whipped cream—a rich treat that’s hard to resist. They also feature two classics packed with personality: Raspberry & chocolate, made with homemade raspberry puree, velvety chocolate ganache, and a touch of gold leaf; and pistachio, filled with silky pistachio cream and crunchy roasted nuts. For an extra zing, look for the passion fruit & milk chocolate bun, harmonizing tangy passion fruit with creamy chocolate atop a crispy croissant base.

Wulff & Konstali
This bakery features two fascinating flavors: one rich with chocolate ganache and the other showcasing blueberry-lavender compote, layered with mascarpone cream and white chocolate. Each is a delicious, soft interpretation of the season’s classic.

Is there a bakery we’ve overlooked? We’d love to hear from you! Enjoy indulging in these tasty offerings.
